Spinach Salad with Strawberries, Feta Cheese & Nuts

This refreshing salad will make you want more! Takes about 20 minutes with arugula, spinach, strawberries, goat cheese, and nuts, so it’s that SIMPLE!!!

INGREDIENTS


1 cup arugula

1 cup spinach

2 tbsp balsamic vinegar

2 tbsp extra virgin olive oil

1/2 cup pecan

4 oz feta cheese

Salt and black pepper, to taste

8 strawberries, sliced


INSTRUCTIONS

  1. In a large bowl, toss in arugula, spinach, sliced strawberries, pecan, and feta cheese.

  2. Sprinkle with salt and pepper, and drizzle with balsamic vinegar

  3. Top with pecan or your choice of nuts to serve.

Serving Suggestion: You can eat it with extra fruits or nuts on the side

Variation Tip: Healthy and easy lunch that you take on the go, great to prepare at work
