Vegetable Stir-Fry with Noodles
Healthy vegetable stir fry noodles that take only 20 minutes with flavorful soy sauce, great for weeknight dinner and/or family quick dinner ideas.

INGREDIENTS
75g egg or rice noodles, for serving
2 tablespoons vegetable oil (for cooking)
3 cups mixed vegetables (I used broccoli florets, onions, bell pepper, and mushrooms)
2 garlic cloves, minced
½ cup soy sauce or tamari
salt and pepper to taste
INSTRUCTIONS
1. In a medium-sized pan on medium-high heat, add water to boil. Add the noodles and cook as package instructions.
2. Heat vegetable oil in a skillet over medium and add the mixed vegetables (broccoli florets, onions, bell pepper, and mushrooms). Cook, stirring occasionally for 2-4 minutes.
3. Pour in the stir fry sauce with the cooked noodles and cook for about 4 minutes until well blended. Serve on plates or bowls, topped with sesame seeds and fresh basils if desired. ENJOY =)
