Vegetable Stir-Fry with Noodles
Healthy vegetable stir fry noodles that take only 25 minutes with flavorful soy sauce, great for weeknight and/or family dinner.

TOTAL TIME: 25 Mins
75g rice noodles, for serving
2 tablespoons vegetable oil (for cooking)
3 cups mixed vegetables
2 garlic cloves, minced
1 cup cherry tomatoes, halved
½ cup soy sauce
salt, and pepper to taste
1. In a medium-sized pan on medium-high heat, add water to a boil. Add the noodles and cook as per package instructions.
2. Heat vegetable oil in a skillet over medium and add the mixed vegetables (broccoli florets, onions, bell pepper, and mushrooms). Cook, stirring occasionally for 2-4 minutes.
3. Pour in the stir fry sauce with the cooked noodles and cook for about 4 minutes until well blended. Serve on plates or bowls, topped with sesame seeds and fresh basils if desired. ENJOY =)
Serving Suggestion: You can add fresh basil, parsley, or even lemon juice on top as a garnish
Variation Tip: You can also substitute with broccoli, mushrooms, snow peas, edamame
