Shrimp Salad with Avocado

This refreshing meal, combined with avocado and pineapple provides you with all the taste you need for a delightful lunch!

INGREDIENTS


2 tomatoes, chopped

½ lb medium shrimp

1 tbsp olive oil

1 avocado, chopped

1 tbsp cilantro, chopped

1 lime, zested and juiced

1 head of Iceberg lettuce, torn

Salt and black pepper to taste



INSTRUCTIONS

  1. Heat oil in a skillet over medium heat; cook the shrimp until opaque, 8-10 minutes.

  2. Place the lettuce on a serving plate and top with shrimp, tomatoes, and avocado.

  3. Whisk together the remaining olive oil, lime zest, juice, salt, and pepper in a bowl.

  4. Pour the dressing over the salad and sprinkle with cilantro to serve.

Serving Suggestion: Instead of cilantro you can also use parsley

Variation Tip: This is a delicious lunch with tangy flavors
