Quinoa Brown Rice with Sweet Potatoes

Quinoa is a beneficial and tasty whole grain in itself… blended with these additional healthy and tasty ingredients, it creates a wonderful dinner dish filled with protein, dietary fiber, B vitamins, and dietary minerals! This meal is great for family and group gatherings… so call some friends over!



PREP TIME: 15 Mins

COOK TIME: 35 Mins



1 cup quinoa

1 cup brown rice

¼ cup onion, chopped

1 tsp olive oil

2 cups vegetable broth

fresh lime juice

1 small garlic clove

½ teaspoon salt

2 small sweet potatoes, peeled and cut into 1/2-inch pieces

1. Heat oil in a saucepan over medium heat. Add onion, garlic, and sauté until tender. Add quinoa, rice, and broth. Bring to a boil and simmer for 20 minutes. Remove from heat, allow to cool for 5 minutes. Fluff quinoa with a fork and set aside.

2. In a separate pot, add the sweet potatoes, remaining broth, and 1/2 teaspoon salt. Increase the heat to medium-high and bring to a simmer. Cook, stirring occasionally until the sweet potatoes are tender and the liquid is almost absorbed about 15 minutes.

3. In a serving bowl, add the sweet potato mixture to the quinoa and sprinkle with parsley. Pour your choice of dressing if desired and stir to mix. Serve warm and Enjoy!

Serving Suggestion: Drizzle with lime juice and serve.
