Paprika Tilapia with Brown Rice
This weeknight main entree is one of the best tilapia recipes which is packed with tons of flavor from the seasoning combined with brown rice that you can easily make at home.

Cook Time: 20 mins
2 Tilapia fillets ( about 100-120g each)
salt and black pepper to taste
1 tbsp olive oil
1 tsp fresh parsley
1 tsp fresh basil
1 tbsp paprika
1 medium lemon (juice)
1 cup brown rice rinsed well
3 cups of water or vegetable stock
1/2 teaspoon kosher salt
Marinate the fish with ingredients for about 10 minutes
In a bowl combine fish with the chopped vegetables, season with all the above ingredients
Grease your foil
Use foil, add the seasoned tilapia fillet then fold to cover the top.
Place the foil in an oven tray and bake in a PREHEATED oven at 180C for 20mins. Cook until the tilapia is just beautifully moist and flaky.
For the rice:
Place the brown rice, water (or stock), and salt in a saucepan with a lid over medium-high heat.
Put the lid on and bring it to a boil. Turn the heat down to low and let it simmer for 40-45 minutes. Drain excess liquid and serve.
