Grilled Shrimp Avocado Salad

This low-calorie meal, combined with avocado and pineapple provides you with all the taste you need for lunch!

INGREDIENTS


FOR THE MARINADE SHRIMP


1 pound large shrimp, peeled and deveined 1 tbsp olive oil 3 cloves garlic, minced 1/2 lemon zest 1/2 red pepper flakes 1 tsp paprika powder Salt and black pepper to taste


FOR THE SALAD

1 avocado, chopped 1 pineapple, chopped 1 lemon, juiced 2 cups lettuce



INSTRUCTIONS


TO COOK THE SHRIMP


  1. Whisk together all ingredients for shrimp marinade in a large bowl. Place shrimp in a sealable plastic bag and pour marinade over shrimp. Put in the refrigerator for 15 to 20 minutes.

  2. Preheat the oven to 450 degrees. Place shrimp directly on a baking pan and bake for about 8-10 minutes, until opaque.


FOR THE SALAD


  1. Add the chopped avocado over lettuce topped with the cooked shrimp on a serving plate. Sprinkle with lime juice and chopped pineapple to serve.
