10 cherry tomatoes
1 head of romaine lettuce
1/4 tsp fresh lime juice
Salt and black pepper, to taste
8 black olives
2 spring onions
1 tbsp of balsamic vinegar
Boil the eggs in salted water over medium heat for 12 mins. Once cooled, peel and chop them into quarter size. Place in a salad bowl with the remaining ingredients.
Add the chopped onions all over and decorate with cherry tomatoes and black olives to serve. Sprinkle with balsamic vinegar or your favorite dressing (optional).
Serving Suggestion: You can add some nuts of your choosing on top for extra protein
