Egg Tomato Salad with Olives

INGREDIENTS

4 eggs

10 cherry tomatoes

1 head of romaine lettuce

1/4 tsp fresh lime juice

Salt and black pepper, to taste

8 black olives

2 spring onions

1 tbsp of balsamic vinegar



INSTRUCTIONS

  1. Boil the eggs in salted water over medium heat for 12 mins. Once cooled, peel and chop them into a quarter size. Place in a salad bowl with the remaining ingredients.

  2. Add the chopped onions all over and decorate with the cherry tomatoes and black olives to serve. Sprinkle with balsamic vinegar or your favorite dressing (optional).

Serving Suggestion: You can add some nuts of your choosing on top for extra protein

Variation Tip: This salad is a great quick and easy meal that fills you up and is very tasty.
