Egg Pita Breakfast

Craving a deliciously healthy QUICK-TO-MAKE breakfast? Well, try this tasty pita dish combined with tomato and spinach to brighten up your morning and jump-start your day.

  • 1 teaspoon coconut oil

  • 1/2 of a whole wheat pita bread

  • 2 boiled eggs

  • 8 cherry tomatoes, halved

  • 6-8 spinach leaves

  • salt and pepper to taste

  • 1/2 small red onion, thinly sliced

  • Sweet pepper


  1. Heat olive oil in a medium pan.

  2. Add onion and cook, stirring until soft, about 4 minutes. Add cherry tomatoes, and season with salt and pepper. Cook until the tomatoes are soft, about 6 minutes.

  3. Chopped bowled egg in thin pieces.

  4. Add the cook tomato mixture and egg mixture with spinach into the pita. Top with your choice of sauce (optional).
