Egg Pita Breakfast
Craving a deliciously healthy QUICK-TO-MAKE breakfast? Well, try this tasty pita dish combined with tomato and spinach to brighten up your morning and jump-start your day.

1 teaspoon coconut oil
1/2 of a whole wheat pita bread
2 boiled eggs
8 cherry tomatoes, halved
6-8 spinach leaves
salt and pepper to taste
1/2 small red onion, thinly sliced
Heat olive oil in a medium pan.
Add onion and cook, stirring until soft, about 4 minutes. Add cherry tomatoes, and season with salt and pepper. Cook until the tomatoes are soft, about 6 minutes.
Chopped bowled egg in thin pieces.
Add the cook tomato mixture and egg mixture with spinach into the pita. Top with your choice of sauce (optional).
