Blackberry Pistachio Oatmeal

This energy booster oatmeal is delicious and healthy. An excellent way to start your morning, top with blackberries, pistachio, pomegranate, and nuts.

Blackberry Pistachio Oatmeal


  • 1/2 cup rolled oats

  • 2 cups of water, non-dairy milk, or a blend of both

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 2/3 cup fresh blackberries

  • 1/2 cup of fresh or dried pomegranate seeds

  • 1 tablespoon chopped pistachios (topping)


1. Add oats and a pinch of salt to a pot. Add water and stir to combine. Heat over medium-high heat for 8-10 minutes or until all the liquid has been absorbed. You’ll know the oatmeal is done when all the liquid is absorbed and the oats are thick. Stir in the vanilla extract and non-dairy milk for extra thickness and flavor.

2. Portion oats into a bowl and top with pomegranate, pistachios, and your choice of nuts. Optional: Add some dark chocolate chips if desired.
